Ingredients

Puff pastry
  • 1 sheet puff pastry Thawed.
Cheese
  • 8 oz brie Cut into 24 small cubes.
Cranberry topping
  • 0.5 cup whole berry cranberry sauce
Toppings
  • 0.25 cup pecans Finely chopped.
  • 1 tbsp honey
Garnish
  • 0.1 fresh rosemary sprigs For garnish.

Equipment

  • 1 sheet pan
  • 1 cast iron skillet
  • 1 Dutch oven

Method

Prep and assemble
  1. Preheat oven to 375°F and grease a 24-cup mini muffin tin with light coating so the pastry releases easily.
  2. Lightly roll the puff pastry and cut into 24 squares, then press each square into a muffin cup with a snug fit.
  3. Place a cube of brie in each pastry cup, then top with 1 teaspoon whole-berry cranberry sauce.
  4. Sprinkle chopped pecans over each bite so every cup gets a crunchy top layer.
Bake and finish
  1. Bake for 13-15 minutes at 375°F until the pastry is puffed and golden and the brie is fully melted, with melted cheese visibly bubbling through the pastry.
  2. Cool for 5 minutes in the tin, then drizzle each bite with honey for shine and garnish with fresh rosemary sprigs.

Notes

For easiest filling, keep the brie cubes cold until assembly so they stay portioned. Store baked bites in the refrigerator up to 2 days; reheat at 350°F until warmed through. For a dietary swap, use a lactose-free brie alternative if available (texture may be slightly softer).
