Boil and prep potatoes
  1. Boil whole unpeeled potatoes in water for 20-25 minutes until just tender, then cool completely. Once cool, peel and shred the potatoes.
Mix and assemble
  1. Preheat the oven to 350F, and butter a 9x13-inch baking dish. Mix sour cream, 1 cup cheddar, Parmesan, green onions, butter, salt, pepper, and garlic powder until smooth.
  2. Gently fold the shredded potatoes into the sour cream mixture. Spread the mixture into the prepared dish and top with the remaining cheddar.
Bake and garnish
  1. Bake at 350F for 40-45 minutes until hot and golden on top. Add fresh chives as a garnish, then serve.

Notes

For the creamiest Romanoff-style texture, cool the boiled potatoes completely before shredding so the mixture stays thick instead of watery. Store leftovers covered in the refrigerator for up to 4 days; reheat in a 325F oven until warmed through. Freezing is not recommended because the sour-cream base can break after thawing. For a lighter option, use reduced-fat sour cream and part-skim cheddar to cut calories while keeping the same bake method.
