Chicken thighs
  • 4 bone-in skin-on chicken thighs
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp onion powder
  • 0.5 tsp dried oregano
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 lemon wedges for serving
  • 1 fresh parsley for serving

Method
 

Prep and season
  1. Pat the chicken thighs completely dry with paper towels to help the skin crisp. Make sure there’s no visible moisture on the surface.
  2. Rub the chicken thighs with olive oil, then thoroughly rub the mixed spices all over the chicken. Coat every surface so the crust forms evenly.
  3. Preheat the air fryer to 400F for 5 minutes. Let it fully heat before adding the chicken for faster browning.
Air fry
  1. Place the chicken thighs skin-side down in the air fryer basket without overlapping. Arrange them in a single layer so hot air can circulate.
  2. Air fry for 10 minutes. You should start seeing light browning on the underside.
  3. Flip the thighs to skin-side up and air fry for 10 to 12 more minutes, until skin is deeply golden and crispy and internal temperature reaches 165F. The skin should look crackly and set, not pale.
Rest and serve
  1. Rest the chicken thighs for 5 minutes before serving. This helps juices settle so the meat stays juicy while the skin remains crisp.
  2. Serve with lemon wedges and fresh parsley. Add citrus and herbs right before eating for bright flavor.

Notes

For extra crisp skin, pat thoroughly dry and avoid overcrowding—use two batches if needed. Refrigerate leftovers in a sealed container up to 3 days; reheat in the air fryer at 380F for 5–8 minutes until hot. Freezing is not recommended for best texture. For a lighter option, use chicken breast tenders, but reduce cook time to prevent dryness.
