Prep and bake
- Preheat oven to 375F and grease a 9x13 baking dish with a light coating of butter or nonstick spray.
- Toss apple slices with granulated sugar, brown sugar, cinnamon, nutmeg, cornstarch, and lemon juice, then spread the spiced apples in the prepared dish.
- Combine rolled oats, flour, brown sugar, cinnamon, and salt, then cut in cold butter until large, chunky clumps form.
- Scatter the oatmeal crumble generously over the apples so every inch is covered.
- Bake 40-45 minutes until the topping is deeply golden and the apple filling bubbles at the corners.
Rest and serve
- Rest for 10 minutes to thicken the filling before serving.
- Serve warm with vanilla ice cream.
Notes
For best results, use cold butter for the crumble so it bakes into crisp clumps rather than a sandy mix. Store covered in the refrigerator up to 4 days; reheat individual portions in the oven or microwave until warmed. Freezing is yes—freeze baked portions up to 2 months and reheat from thawed. For a lighter option, use reduced-fat butter (or half replace with unsweetened applesauce) while keeping the bake time the same.
