Prep and fill
- Preheat the oven to 375F and grease a 9x13 baking dish.
- Toss the apple slices with granulated sugar, brown sugar, cinnamon, nutmeg, allspice, cornstarch, and lemon juice, then spread them in the prepared dish.
Make oat crumble
- Combine the rolled oats, flour, brown sugar, cinnamon, and salt, then cut in the cold butter with your fingertips until large chunks and clumps form.
- Scatter the crumble evenly over the apples so every surface is covered.
Bake and serve
- Bake for 40-45 minutes at 375F until the oat topping is deeply golden and the apple filling is bubbling, especially at the corners.
- Cool for 10 minutes, then serve warm with vanilla ice cream or whipped cream.
Notes
To keep the crumble extra crisp, use cold butter and stop mixing as soon as you see large clumps. Store covered in the refrigerator up to 4 days; reheat individual portions in a 350F oven until warmed through. Freezing is okay, though the topping may soften slightly when thawed. For a lighter option, swap part of the butter (about half) with neutral oil or use a plant-based butter that bakes similarly.
