Ingredients
  

For apple filling
  • 4 apples peeled and finely diced
  • 0.25 cup brown sugar
  • 2 tsp cinnamon
  • 0.25 tsp nutmeg
  • 0.25 tsp allspice
  • 1 tbsp cornstarch
  • 1 tbsp butter
  • 12 egg roll wrappers
  • 1 egg beaten for sealing
  • 1 vegetable oil for frying
For coating and dipping
  • 0.25 cup sugar
  • 1 tsp cinnamon for coating
  • 1 caramel sauce for dipping

Method
 

Cook and cool the apple filling
  1. Cook the diced apples with butter, brown sugar, cinnamon, nutmeg, allspice, and cornstarch over medium heat for 5-7 minutes, stirring, until softened and thickened. The mixture should look glossy and hold together.
  2. Cool the apple filling completely before assembling the egg rolls. It should be cool to the touch so the wrappers don’t soften prematurely.
Assemble the egg rolls
  1. Place 2-3 tablespoons of apple filling in the center of each egg roll wrapper. Keep the filling as centered as possible for even rolling.
  2. Fold the sides over and roll tightly, keeping the seam aligned. The egg roll should be compact with no gaps around the filling.
  3. Seal the final edge with beaten egg. Press lightly so the seam stays closed during frying.
Fry and coat
  1. Heat vegetable oil to 350°F. The oil is ready when it maintains a steady fry temperature when you lower in a test roll.
  2. Fry the egg rolls 2-3 minutes per side until deeply golden. Turn once when the first side is browned.
  3. Drain the egg rolls on paper towels. Blot briefly so they stay crisp before coating.
  4. Immediately roll the hot egg rolls in cinnamon sugar. Make sure the coating adheres while they’re still warm.
Serve
  1. Serve the apple pie egg rolls with caramel sauce for dipping. Add the sauce on the side so the wrappers stay crisp.

Notes

For crispness, cool the apple filling completely before assembling, and coat the egg rolls in cinnamon sugar immediately while hot. Store leftovers in an airtight container in the refrigerator for up to 2 days; reheat at 375°F for 5-8 minutes to refresh the crunch. Freezing is not recommended because the wrappers can soften when thawed. For a less-sweet option, reduce the cinnamon-sugar coating sugar to 2 tablespoons while keeping the apple filling amounts the same.
