Ingredients

Cranberry sauce
  • 12 oz fresh cranberries
  • 0.75 cup granulated sugar
  • 0.25 cup brown sugar, packed
  • 0.75 cup orange juice
  • 0.25 cup water
  • 1 cinnamon stick
  • 1 tsp orange zest
  • 0.125 salt
  • 1 tsp vanilla extract

Equipment

  • 1 cast iron skillet

Method

Cook the sauce base
  1. In a saucepan, combine granulated sugar, brown sugar, orange juice, water, cinnamon stick, and salt. Bring to a boil over medium-high heat, stirring until the sugar fully dissolves, then keep the boil steady for about 30 seconds as the mixture looks clear.
  2. Add fresh cranberries to the boiling mixture and return to a boil. Once bubbling again, keep it at a boil for 1 minute so the berries start bursting at the edges.
Simmer to thicken
  1. Reduce heat to low and simmer, stirring often, for 10-12 minutes. Continue until most berries burst and the sauce thickens enough to coat the back of a spoon.
Finish, cool, and chill
  1. Remove from heat and stir in orange zest and vanilla extract, then discard the cinnamon stick. The sauce should turn darker red and look glossy right away.
  2. Cool to room temperature, then chill until thickened further. Refrigerate for about 5 minutes so it sets to a spoonable, dense texture.

Notes

Pro tip: Stir often during the simmer so the sugars don’t caramelize on the bottom. Store covered in the refrigerator for up to 7 days. Freezing is not recommended because the texture can become grainy after thawing; for a dietary swap, use a sugar substitute that measures like sugar to keep a similar set.
