Ingredients

large eggs
  • 12 large eggs
deviled egg filling
  • 0.3333333333 cup mayonnaise
  • 1 tbsp tomato paste
  • 2 tsp prepared horseradish
  • 1 tsp Worcestershire sauce
  • 1 tsp lemon juice
  • 0.5 tsp hot sauce
  • 0.5 tsp celery salt
  • 1 tbsp vodka (optional) Optional; adds a subtle Bloody Mary note.
  • 0.25 black pepper to taste
garnish
  • 0.5 celery leaves, sliced
  • 0.5 pickled okra or olives
  • 1 Old Bay

Equipment

  • 1 sheet pan

Method

Boil and chill the eggs
  1. Place 12 large eggs in a pot and cover with cold water, then bring to a boil at high heat. Cover the pot, remove from heat, and let stand for 12 minutes.
  2. Transfer the eggs to an ice bath and chill for 10 minutes, then peel and halve them lengthwise.
Make the Bloody Mary yolk filling
  1. Mash the yolks with mayonnaise, tomato paste, prepared horseradish, Worcestershire sauce, lemon juice, hot sauce, celery salt, and vodka (if using) until smooth. Scrape the mixture as needed so it pipes evenly.
  2. Season the filling with black pepper to taste, then mash again briefly to fully combine.
Fill and garnish
  1. Pipe the filling into the egg whites for a neat, even layer. Fill each half all the way to the edges.
  2. Top each egg with a celery leaf, a slice of pickled okra (or an olive), and a pinch of Old Bay.

Notes

For the cleanest piping, keep the yolks mixture slightly stiff—add a teaspoon more mayonnaise only if it feels crumbly. Store filled eggs covered in the refrigerator up to 2 days; garnish right before serving for the best texture. Freezing is not recommended. If you want a lighter option, swap mayonnaise for light mayo to reduce calories while keeping the same flavor profile.
