Ingredients

Boozy cranberry sauce base
  • 12 oz fresh cranberries Use fresh for the best burst-and-thicken texture.
  • 0.75 cup sugar
  • 0.5 cup ruby port or red wine
  • 0.25 cup orange juice
  • 2 tbsp Grand Marnier or orange liqueur Add after simmering so the flavor stays vivid.
  • 1 cinnamon stick
  • 1 tsp orange zest
  • 1 salt Pinch.

Equipment

  • 1 Dutch oven

Method

Simmer the cranberry mixture
  1. In a saucepan, combine sugar, ruby port or red wine, orange juice, cinnamon stick, and salt, then heat over medium-high until it reaches a full boil (bubbling that does not slow when you stir).
  2. Add fresh cranberries and simmer for 10-12 minutes until the berries burst and the sauce visibly thickens and looks glossy (occasional bubbling should coat the spoon).
Finish and chill
  1. Remove from the heat, then stir in Grand Marnier or orange liqueur and orange zest until evenly combined and fragrant.
  2. Discard the cinnamon stick.
  3. Cool the sauce to room temperature, then chill before serving so it thickens further into a spoonable ruby gel.

Notes

Pro tip: simmer only until the berries burst and the sauce coats the back of a spoon—overcooking can make it too tight. Store covered in the refrigerator for up to 5 days. Freeze yes—freeze up to 2 months, then thaw in the fridge and stir to loosen. For a lighter option, replace part of the sugar with an equal amount of sugar substitute formulated for cooking, keeping the same simmer time.
