Bake the loaf
- Preheat the oven to 350°F and grease a 9x5 loaf pan for easy release.
- Whisk the melted butter and brown sugar together until smooth, then whisk in the eggs and vanilla until glossy.
- Stir in the mashed bananas until fully incorporated with no dry banana streaks.
- Fold in the all-purpose flour, baking soda, cinnamon, nutmeg, and salt until just combined, then fold in the walnuts.
- Pour the batter into the prepared pan and bake for 60–70 minutes until deep golden brown and a toothpick inserted in the center comes out clean.
- Cool in the pan for 15 minutes before turning out to finish setting the crumb.
Notes
For the darkest, most caramel-like flavor, use very ripe bananas (freckled skins) and pack the brown sugar firmly. Store tightly wrapped at room temperature up to 3 days or refrigerate up to 5 days; freeze wrapped slices for up to 2 months. For a lower-sugar option, reduce brown sugar to 3/4 cup and expect a slightly less caramelized crust and softer crumb.
