Sauté the vegetables
- In a Dutch oven, sauté the onion, carrots, and celery in bacon drippings or butter for 5 minutes until softened and lightly glossy. Visual cue: look for slight browning at the edges of the vegetables.
- Add the garlic and cook for 1 minute until fragrant, stirring constantly. Visual cue: small bubbles and a noticeable garlic aroma.
Build the ranch chicken broth
- Pour in the chicken broth and stir in the ranch seasoning mix, then bring the mixture to a boil. Visual cue: steady bubbling across the surface.
- Add the egg noodles and cook for 5 minutes, stirring occasionally so they don’t stick. Visual cue: noodles begin to soften and loosen from the pot.
- Stir in the shredded chicken and most of the bacon, letting everything warm through. Visual cue: chicken is evenly distributed throughout the broth.
Make it creamy and season
- Reduce the heat, then stir in the softened cream cheese until melted and smooth. Visual cue: no cream cheese streaks remain.
- Stir in the heavy cream and shredded cheddar until smooth and melted. Visual cue: the broth turns creamy and thick with an orange-gold sheen.
- Season with salt and pepper to taste, then serve topped with the remaining bacon and green onions. Visual cue: garnish sits bright and fresh on top of the creamy soup.
Notes
For best texture, keep the soup at a gentle simmer once the noodles are added—boiling hard can make noodles go mushy. Refrigerate leftovers in an airtight container up to 3 days; reheat on the stove over medium-low, adding a splash of broth if it thickens. Freezing is not recommended because cream-based soup and noodles can break and soften after thawing. If you want a lighter option, use half-and-half instead of heavy cream and reduce the cheddar slightly while still melting until smooth.
