Ingredients

Yukon gold potatoes
  • 3 lb Yukon gold potatoes peeled and cubed
garlic
  • 1 whole head garlic cloves peeled
onion
  • 1 onion diced
chicken broth
  • 4 cup chicken broth
heavy cream
  • 1.5 cup heavy cream
unsalted butter
  • 3 tbsp unsalted butter
sharp cheddar
  • 2.5 cup sharp cheddar shredded
fresh thyme leaves
  • 1 tsp fresh thyme leaves
fresh chives
  • 1 tbsp fresh chives chopped
fresh rosemary
  • 1 tbsp fresh rosemary chopped
salt
  • 1 tsp salt
black pepper
  • 0.5 tsp black pepper

Equipment

  • 1 Dutch oven
  • 1 Immersion blender

Method

Roast garlic
  1. Roast the garlic cloves in 1 tablespoon olive oil at 400F for 20 minutes until golden and soft; cool and mash into a paste.
Build the soup base
  1. Melt the butter in a large pot and sauté the onion for 5 minutes.
  2. Stir in the mashed roasted garlic and cook for 1 minute.
  3. Add the chicken broth and cubed potatoes, then simmer for 20 minutes until very tender.
Blend, finish, and season
  1. Blend the soup smooth with an immersion blender, then stir in the heavy cream.
  2. Reduce the heat to low and stir in the shredded cheddar until melted.
  3. Add the thyme leaves, rosemary, and chives, then season with the salt and black pepper.

Notes

Pro tip: blend only until smooth, then keep the heat on low when adding cheddar so the cheese melts in without graininess. Refrigerate leftovers up to 4 days; reheat gently until steaming. Freezing isn’t recommended for the best texture. For a dairy-light swap, use half-and-half instead of heavy cream and a reduced-fat cheddar, noting the soup may be slightly less thick.
