  • 1.5 lb boneless chicken thighs or breasts
Marinade
  • 0.25 cup fresh lime juice
  • 3 tbsp olive oil
  • 4 garlic, minced
  • 2 tsp chili powder
  • 2 tsp cumin
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 0.5 tsp onion powder
  • 1 tsp salt
  • 0.25 tsp black pepper
  • 0.25 tsp cayenne pepper
  • 0.25 cup fresh cilantro, chopped

Method
 

Make the marinade
  1. Whisk fresh lime juice, olive oil, garlic, chili powder, cumin, smoked paprika, oregano, onion powder, salt, pepper, cayenne pepper, and fresh cilantro, chopped until fully combined and fragrant. The mixture should look evenly speckled with herbs and spices.
Marinate the chicken
  1. Coat boneless chicken thighs or breasts with the marinade and refrigerate for at least 2 hours, or overnight, for deep flavor. The chicken should be fully covered and look glossy with spice staining.
Cook and slice
  1. Heat a cast iron skillet over medium-high heat until hot, then cook the chicken for 6-7 minutes per side, until char marks appear and the thickest part reaches 165°F. You should see dark grill-style patches forming on the surface as it cooks.
  2. Rest the cooked chicken for 5 minutes, then slice thinly against the grain. The juices should settle, and the slices should stay tender without shredding.
Assemble tacos
  1. Serve the sliced chicken in warm corn tortillas and top with pico de gallo, avocado, fresh cilantro, and lime wedges. Finish with lime to brighten the charred, spice-forward chicken.

Notes

Pro tip: If marinating overnight, place chicken and marinade in a resealable bag so every surface stays coated. Store cooked chicken in the refrigerator up to 3 days; reheat in a skillet over medium to avoid drying out. Freezing is not recommended for the fully assembled tacos, but cooked chicken can be frozen up to 2 months for quick reheating. For a lower-sodium version, use a reduced-salt seasoning or cut the added salt to 1/2 tsp while keeping the spices the same.
