Ingredients

Chicken Thigh Marinade
  • 5 boneless skinless chicken thighs Use 4–6 thighs for about 4 servings.
  • 0.25 cup olive oil
  • 3 tbsp lemon juice
  • 1 tbsp lemon zest
  • 4 garlic, minced
  • 1 tbsp Dijon mustard
  • 1 tbsp honey
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp red pepper flakes
  • 1 fresh herbs for serving Chopped or torn, for topping after cooking.

Equipment

  • 1 cast iron skillet

Method

Make the marinade
  1. Whisk olive oil, lemon juice, lemon zest, minced garlic, Dijon mustard, honey, dried oregano, dried thyme, smoked paprika, salt, black pepper, and red pepper flakes until emulsified and glossy.
  2. Add the boneless skinless chicken thighs to the marinade and toss to coat completely, making sure each piece is evenly covered.
Marinate
  1. Refrigerate the coated chicken thighs for at least 2 hours, or up to 24 hours, until the surface looks more deeply seasoned and slightly opaque from the acid.
Cook the chicken
  1. Grill the marinated chicken thighs over medium-high heat for 5–6 minutes per side, flipping once, until deep char marks show and the crust looks caramelized.
  2. Alternatively, pan-sear in a hot oiled cast iron skillet for 5–6 minutes per side, until caramelized char marks appear and the edges are browned.
  3. Cook until the internal temperature reaches 165F, and the juices run clear with a firm-yet-tender texture.
Finish
  1. Rest the cooked chicken thighs for 5 minutes before serving so the juices redistribute, then top with fresh herbs.

Notes

Pro tip: Pat the chicken lightly before grilling if the marinade is pooling, which helps you get stronger caramelized char marks. Refrigerate marinated chicken up to 24 hours; cooked chicken keeps 3–4 days in the fridge and reheats well. Freezing: freeze cooked chicken up to 2 months (marinade doesn’t hold up well for freezing raw). Dietary swap: use maple syrup instead of honey for a similar sweetness in the marinade.
