Ingredients

Frozen corn
  • 4 cup frozen corn thawed
Cream cheese
  • 8 oz cream cheese cubed
Butter
  • 0.25 cup butter
Sour cream
  • 0.5 cup sour cream
Ranch seasoning
  • 1 packet (1 oz) ranch seasoning
Shredded cheddar
  • 1.5 cup shredded cheddar divided
Bacon
  • 6 slice bacon cooked and crumbled
Jalapeno
  • 1 jalapeno seeded and diced
Green onions
  • 2 green onions sliced

Equipment

  • 1 sheet pan

Method

Prep and mix
  1. Preheat the oven to 350F and grease a 2-quart baking dish. Make sure the dish has an even coating so the casserole releases cleanly.
  2. Melt the cubed cream cheese and butter together until smooth, then stir in the sour cream and ranch seasoning. Look for a glossy, fully combined mixture with no visible cream cheese lumps.
  3. Fold in the thawed corn, 1 cup shredded cheddar, most of the crumbled bacon, and the diced jalapeno. Stir until the corn is evenly coated and the jalapeño is distributed throughout.
Bake and finish
  1. Spread the mixture into the greased baking dish, then top with the remaining shredded cheddar and bacon. The surface should look thick and evenly covered.
  2. Bake for 25-30 minutes at 350F until bubbly and golden. You should see active bubbling around the edges and a browned top.
  3. Sprinkle the sliced green onions over the casserole before serving. Finish with a fresh green layer for a pop of color.

Notes

For the creamiest texture, thaw the frozen corn fully and drain any excess liquid before folding it in. Store leftovers in the refrigerator for up to 3 days; reheat in the oven or microwave until hot throughout. Freezing is not recommended because the corn can soften and the dairy may break. For a mild kick, remove the jalapeno seeds; for a different note, use reduced-fat cream cheese if you want a lighter option.
