Banana bread batter
  • 3 ripe bananas Mash well until mostly smooth.
  • 0.5 cup butter Melted, then cooled slightly.
  • 0.75 cup sugar Use for batter.
  • 2 eggs Large.
  • 1 tsp vanilla extract For batter.
  • 1.5 cup all-purpose flour All-purpose flour.
  • 1 tsp baking soda Baking soda.
  • 0.5 tsp salt Table salt.
Cream cheese layer
  • 8 oz cream cheese Softened.
  • 0.25 cup sugar For filling.
  • 1 egg Large.
  • 1 tsp vanilla For filling.
Cinnamon swirl
  • 3 tbsp brown sugar For swirl.
  • 1.5 tsp cinnamon For swirl.

Method
 

Prep the pan and filling
  1. Preheat the oven to 350°F and grease a 9x5 loaf pan. Your pan should be coated so the loaf releases cleanly.
  2. Beat cream cheese, sugar, egg, and vanilla until smooth for the filling. Stop when the mixture looks glossy and lump-free.
Make the banana batter
  1. Whisk melted butter, sugar, eggs, and vanilla into mashed bananas for the batter. Mix until the banana is evenly combined.
  2. Fold in flour, baking soda, and salt. Stop mixing once you no longer see dry flour.
Assemble and swirl
  1. Pour half the banana batter into the pan and spread it evenly. Fill the bottom layer in an even thickness.
  2. Spread all the cream cheese filling evenly on top. Aim for full coverage without breaking through the batter.
  3. Sprinkle the cinnamon swirl mixture over the cream cheese. You want a visible ribbon-like dusting across the surface.
  4. Pour the remaining batter on top and swirl once or twice with a knife. Create marbled streaks without over-mixing.
Bake
  1. Bake at 350°F for 65–75 minutes until deeply golden. A toothpick inserted in the outer banana bread should come out clean.

Notes

Pro tip: for the cleanest layers, spread the cream cheese filling gently so it sits flat before adding the cinnamon swirl. Store the loaf wrapped at room temperature for up to 3 days or in the refrigerator for up to 5 days; freeze slices for up to 2 months. For a lower-sugar swap, replace up to half the sugar in the batter and filling with a 1:1 baking-style sugar substitute.
