Method
Assemble in the slow cooker
- Place the chicken breasts in the slow cooker in an even layer.
- In a bowl, mix the cream of chicken soup, chicken broth, ranch seasoning mix, garlic powder, and black pepper, then pour the mixture over the chicken so it’s well coated.
- Set the cream cheese cubes on top of the chicken and sauce mixture.
Slow cook until tender
- Cook on LOW for 6–7 hours, or HIGH for 3–4 hours, until the chicken is very tender and easily shreds.
Shred and make the sauce smooth
- Remove the chicken from the slow cooker and shred it with two forks while it’s still warm.
- Stir the sauce until the cream cheese is fully incorporated and smooth, scraping the bottom and sides to dissolve any remaining cubes.
- Return the shredded chicken to the sauce and stir to combine so every piece is coated.
Serve
- Serve the creamy ranch chicken over mashed potatoes, rice, or in sandwich rolls, and garnish with fresh chives.
Notes
For the silkiest sauce, stir thoroughly after cooking to fully melt any cream cheese remaining on the bottom. Store leftovers in an airtight container in the refrigerator up to 3–4 days. Freezing is not recommended because the cream sauce can separate after thawing; rewarm gently. If you want a lighter option, use reduced-fat cream cheese.
