Ingredients

apple filling
  • 6 large apples peeled and sliced
  • 0.25 cup granulated sugar
  • 2 tbsp brown sugar
  • 2 tsp cinnamon
  • 0.25 tsp nutmeg
  • 1 tbsp lemon juice
oat topping
  • 1.5 cup rolled oats
  • 1 cup all-purpose flour
  • 0.75 cup brown sugar packed
  • 1 tsp cinnamon
  • 0.25 tsp salt
  • 0.5 cup unsalted butter melted
  • 1 vanilla ice cream for serving

Equipment

  • 1 slow cooker
  • 1 sheet pan
  • 1 oven-safe dish

Method

Make the apple filling
  1. Toss the sliced apples with granulated sugar, brown sugar, cinnamon, nutmeg, and lemon juice, then add to the slow cooker.
  2. Arrange the apples into an even layer in the slow cooker so they cook uniformly.
Make and add the oat topping
  1. Combine rolled oats, all-purpose flour, packed brown sugar, cinnamon, and salt, then drizzle in melted butter and stir until the mixture forms clumps.
  2. Scatter the oat topping over the apples in the slow cooker and do not stir.
  3. Lay a double layer of paper towels under the lid to absorb excess moisture.
Slow-cook
  1. Cook on Low for 2.5 to 3 hours until the apples are tender and the topping is set.
Optional extra-crisp finish
  1. For a crispier topping, transfer the crisp to an oven-safe dish and broil for 3 to 4 minutes.
  2. Let it rest briefly so the topping firms up before serving.
Serve
  1. Serve warm with vanilla ice cream.

Notes

For the best set, don’t stir after adding the oat topping—clumps help it hold shape. Refrigerate leftovers in a covered container for up to 3 days; reheat in the microwave or a low oven until warm. Freezing is not recommended for the topping texture. For a lighter option, use unsalted butter alternatives and reduce the topping’s brown sugar slightly without changing bake timing.
