  • 2.5 lb boneless skinless chicken thighs
  • 1.5 cup BBQ sauce
  • 2 tbsp brown sugar
  • 1 tbsp apple cider vinegar
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.25 tsp cayenne pepper
  • 1 toasted brioche buns for serving
  • 1 pickles for serving
  • 1 coleslaw for serving
  • 1 extra BBQ sauce for serving

Method
 

Add chicken to the slow cooker
  1. Place the boneless skinless chicken thighs in the slow cooker so they sit in a single layer where possible. This helps them cook evenly and stay tender.
Mix the BBQ sauce
  1. Mix together the BBQ sauce, brown sugar, apple cider vinegar, smoked paprika, garlic powder, onion powder, and cayenne until smooth. Stir well to fully dissolve the brown sugar for a consistent sauce.
Cook until tender
  1. Pour the mixed sauce over the chicken in the slow cooker. Make sure most of the chicken is coated before cooking.
  2. Cook on low for 6–7 hours or high for 3–4 hours, until the chicken is tender and pulls apart easily. Look for shreddable meat when you press a piece with a fork.
Shred and finish
  1. Remove the chicken and shred with two forks until you get bite-size pieces. Keep shredding until no large chunks remain.
  2. Return the shredded chicken to the slow cooker and stir into the sauce. Mix until the chicken looks evenly coated and the sauce clings to it.
Serve
  1. Serve the BBQ chicken on toasted brioche buns with pickles, coleslaw, and extra BBQ sauce. Add the toppings generously so each bite has tangy crunch and sticky sauce.
