Load the slow cooker
- Place the chicken breasts in the slow cooker.
- Add the black beans, corn, Rotel diced tomatoes with green chilies, taco seasoning, and ranch seasoning mix on top.
- Place the cream cheese cubes over everything so they soften while cooking.
Cook until tender
- Cook on low for 6–7 hours or high for 3–4 hours until the chicken is cooked through, with no pink remaining in the center.
Shred and finish creamy
- Remove the chicken, shred with two forks, and return it to the slow cooker.
- Stir everything together until the cream cheese is fully melted and incorporated, turning the mixture thick and creamy.
Serve
- Serve the fiesta chicken over rice, in tortillas, or in bowls topped with shredded cheddar cheese, sour cream, and fresh cilantro.
Notes
For best texture, shred the chicken while it’s still warm so it pulls easily, then stir until the cream cheese disappears for a cohesive, creamy sauce. Store leftovers in the refrigerator up to 4 days in a covered container; freeze up to 3 months. Dietary swap: use reduced-fat cream cheese to lower calories while keeping the creamy consistency.
