Ingredients

Chicken and soup base
  • 1.5 lb boneless skinless chicken thighs
  • 2 can (13.5 oz) full-fat coconut milk
  • 2 cup chicken broth
  • 4 clove garlic
  • 1 tbsp fresh ginger
  • 2 tbsp red curry paste
  • 2 tbsp fish sauce
  • 2 tbsp lime juice
  • 1 tbsp brown sugar
  • 1 stalk lemongrass
  • 2 kaffir lime leaves optional
  • 1 tsp turmeric
Vegetables
  • 2 cup mushrooms, sliced (shiitake or cremini)
  • 1 red bell pepper, thinly sliced
Serving
  • 0.5 fresh cilantro
  • 0.5 lime wedges
  • 0.25 sliced red chilies

Equipment

  • 1 Dutch oven

Method

Build and slow-cook the broth
  1. Place the chicken thighs in the slow cooker. Spread them out so they cook evenly in the coconut broth.
  2. Add the coconut milk, chicken broth, garlic, ginger, red curry paste, fish sauce, lime juice, brown sugar, lemongrass pieces, kaffir lime leaves (if using), and turmeric to the slow cooker. Stir to coat the chicken and distribute the aromatics.
  3. Cook on low for 5–6 hours, or on high for 2.5–3 hours, until the chicken is cooked through. The broth should look cohesive with a warm golden color and noticeable curry aroma.
Shred chicken and finish with vegetables
  1. Remove the chicken and shred with two forks, then return the shredded chicken to the slow cooker. Discard the lemongrass stalks and lime leaves.
  2. Add the sliced mushrooms and thinly sliced red bell pepper to the slow cooker, then cook on high for 20 minutes. Watch for vegetables that are just tender while still holding shape.
Serve
  1. Serve the soup garnished with fresh cilantro, lime wedges, and sliced red chilies. Add extra lime juice to taste at the table.

Notes

For the cleanest flavor, shred the chicken while it’s hot so the strands stay juicy in the coconut broth. Store leftovers in the refrigerator up to 4 days; reheat gently. Freezing is not recommended because mushrooms and bell pepper can soften further, but the chicken base can be frozen separately if you plan to add fresh vegetables later. Dietary swap: use coconut milk labeled “light” only if you want a lighter soup, but expect a thinner, less rich broth.
