Ingredients
  

Gluten-free batter
  • 1.5 cup gluten-free all-purpose flour blend
  • 0.25 cup granulated sugar
  • 2 tsp baking powder
  • 1.5 tsp cinnamon
  • 0.25 tsp nutmeg
  • 0.25 tsp salt
  • 2 eggs
  • 0.5 cup oat milk or almond milk
  • 1 tbsp melted coconut oil
  • 1 tsp vanilla extract
Apples and coating
  • 2 cup apples, peeled and finely diced
  • 1 Cooking spray
Glaze
  • 1 cup powdered sugar
  • 2 tbsp oat milk
  • 0.5 tsp vanilla

Method
 

Make the fritter batter
  1. Whisk the gluten-free all-purpose flour blend, granulated sugar, baking powder, cinnamon, nutmeg, and salt in a bowl until evenly combined.
  2. Whisk the eggs, oat milk or almond milk, melted coconut oil, and vanilla extract in a separate bowl, then fold into the dry ingredients.
  3. Fold in the apples, peeled and finely diced, then let the batter rest for 5 minutes so it thickens slightly.
Air-fry the fritters
  1. Preheat the air fryer to 370°F, then line the basket with parchment and spray with cooking spray.
  2. Drop 3-tablespoon portions of batter into the air fryer, flatten slightly, and spray the tops with cooking spray.
  3. Air fry for 10 to 12 minutes, flipping at 6 minutes, until golden on both sides.
Glaze and serve
  1. Whisk the powdered sugar, oat milk, and vanilla until smooth to form a pourable glaze.
  2. Drizzle the glaze over the warm fritters immediately so it sets lightly on the crisp surface.

Notes

For best texture, rest the batter for the full 5 minutes before portioning—this helps the gluten-free flour hydrate. Store leftovers in an airtight container in the fridge for up to 3 days; reheat in the air fryer at 325°F for 2 to 3 minutes to re-crisp. Freezing is not recommended because the apple texture can soften after thawing. For a dairy-free option, use oat milk in the glaze and batter (already compatible) to keep the fritters lactose-free.
