Ingredients

Green bean bundles
  • 1.5 lb fresh green beans Trimmed.
  • 8 bacon slices Halved crosswise.
  • 0.25 cup butter Melted.
  • 0.333 cup brown sugar
  • 2 garlic cloves Minced.
  • 1 tbsp soy sauce
  • 0.25 tsp black pepper

Equipment

  • 1 sheet pan

Method

Prep and blanch
  1. Preheat the oven to 400F. Blanch the green beans in boiling water for 3 minutes, then plunge into ice water and drain.
  2. Gather 8-10 beans into a bundle, then wrap each bundle with a half slice of bacon and place seam-side down in a baking dish.
Make glaze and bake
  1. Whisk the melted butter, brown sugar, garlic, soy sauce, and black pepper until the sugar dissolves and the glaze looks smooth.
  2. Pour the glaze evenly over the bacon-wrapped bundles so they’re mostly coated.
  3. Bake for 25-30 minutes at 400F until the bacon is crisp and the glaze is bubbly, with a glossy surface.
Serve
  1. Spoon the pan glaze over the bundles and serve warm.

Notes

For best crispness, keep the seam-side down so the bacon sets as it bakes. Store leftovers in an airtight container in the refrigerator for up to 3 days; reheat in a 350F oven until warmed through. Freezing is not recommended because the green beans soften after thawing. For a lower-sodium option, use low-sodium soy sauce while keeping the rest of the glaze the same.
