Ingredients
  

Mango glaze and marinade
  • 1 boneless chicken thighs Use 4 to 6 thighs (about 2 lb)
  • 0.75 cup mango, peeled and pureed
  • 3 tbsp soy sauce
  • 2 tbsp lime juice
  • 1 tbsp lime zest
  • 2 tbsp honey
  • 3 garlic, minced
  • 1 tsp ginger, grated
  • 0.5 tsp red pepper flakes
  • 0.25 tsp allspice
To serve
  • 1 fresh cilantro
  • 1 mango chunks
  • 1 lime wedges

Method
 

Make the mango glaze
  1. Blend mango puree with soy sauce, lime juice, lime zest, honey, garlic, ginger, red pepper flakes, and allspice; reserve 1/3 for glazing.
  2. Set the reserved 1/3 glaze aside for later brushing while the rest stays for marinating.
Marinate
  1. Add chicken thighs to the remaining mango mixture and marinate for at least 1 hour, refrigerated, until coated.
  2. While the chicken marinates, keep the reserved glaze covered in the refrigerator.
Grill
  1. Preheat the grill to medium-high and oil the grates to prevent sticking.
  2. Place chicken on the grill and cook 6-7 minutes per side, brushing with the reserved mango glaze in the last 4 minutes of grilling.
  3. Continue grilling until the outside is deeply caramelized and the internal temperature reaches 165°F.
Serve
  1. Transfer chicken to a plate and top or serve with fresh mango chunks, cilantro, and lime wedges.

Notes

For best caramelization, let the grill fully heat to medium-high before placing the chicken on the grates, and keep brushing during the last 4 minutes only to avoid burning. Refrigerate leftovers in a sealed container for up to 3 days; freeze cooked chicken up to 2 months (glaze may dull slightly). For a lower-sugar option, replace honey with an equal amount of a sugar-free honey-style syrup that measures 1:1.
