Apricot honey topping
  • 1 cup apricot preserves Use 1/3 cup
  • 2 tbsp honey

Method

Make the creamy base
  1. Beat goat cheese, cream cheese, and milk until light and smooth.
  2. Spread the mixture into a shallow serving bowl and make a swirl in the center.
Warm the apricot-honey topping
  1. Warm apricot preserves with honey for 20-30 seconds, stirring until the mixture turns loose.
  2. Spoon the apricot honey over the goat cheese.
Finish and serve
  1. Top with dried apricots, pistachios, thyme leaves, and a pinch of flaky sea salt.
  2. Serve with crackers or crostini.

Notes

Pro tip: soften the goat cheese and cream cheese fully so the spread turns glossy and smooth with no lumps. Store covered in the fridge up to 3 days; the topping is best assembled just before serving. Freezing isn’t recommended because the dairy may loosen after thawing. For a dairy-reduced option, use lactose-free goat and cream cheese (texture remains closest to the original).
