Ingredients

For apple filling
  • 8 Granny Smith apples peeled and sliced
  • 0.75 cup granulated sugar
  • 1 tbsp all-purpose flour
  • 0.5 tsp cinnamon
For the topping
  • 1.5 cup all-purpose flour
  • 1.5 cup rolled oats
  • 1 cup brown sugar packed
  • 0.5 cup granulated sugar
  • 1 tsp cinnamon
  • 0.5 tsp baking powder
  • 0.25 tsp salt
  • 1 cup unsalted butter cold and cubed
  • whipped cream or ice cream for serving

Equipment

  • 1 sheet pan

Method

Prepare and preheat
  1. Preheat the oven to 350F and generously butter a 9x13 baking dish so the topping doesn’t stick.
Make the apple filling
  1. Toss the apple slices with granulated sugar, all-purpose flour, and cinnamon, then pour the mixture into the buttered baking dish.
Build the crisp topping
  1. In a bowl, combine the flour, rolled oats, both sugars, cinnamon, baking powder, and salt.
  2. Cut in the cold cubed butter with your hands until the mixture forms large, butter-streaked clumps for a crunchy top.
Assemble and bake
  1. Pour and spread the topping evenly over the apples so the crumble covers the surface.
  2. Bake for 55-60 minutes at 350F until the topping is golden brown and the apple filling bubbles at the edges.
Serve
  1. Let the crisp cool slightly, then serve warm with whipped cream or ice cream.

Notes

Pro tip: use cold, cubed butter and mix only until you get big clumps—smaller crumbs can turn dry. Store covered in the refrigerator up to 4 days; reheat at 350F until warmed through. Freezing is not recommended for the best crisp texture. For a lighter option, try unsalted butter substitute and reduce granulated sugar by 2 tbsp (flavor will be slightly less caramel-like).
