Ingredients

Ground beef
  • 1.5 lb ground beef brown and drain
Vegetables
  • 1 cabbage small head, cored and roughly chopped
  • 3 carrots sliced
  • 3 celery sliced
  • 1 onion diced
  • 4 garlic cloves, minced
Tomatoes and broth
  • 1 can (28 oz) crushed tomatoes
  • 1 can (14 oz) diced tomatoes
  • 4 cup beef broth
Seasonings
  • 1 tbsp Worcestershire sauce
  • 1 tsp smoked paprika
  • 1 tsp red pepper flakes adjust to taste
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 0.5 tsp salt to taste
  • 0.5 tsp black pepper to taste
Serving
  • 0.25 cup green onions for serving
  • 1 tbsp hot sauce for serving

Equipment

  • 1 cast iron skillet
  • 1 Dutch oven

Method

Brown the beef
  1. Brown the ground beef in a cast iron skillet over medium-high heat, then drain it before adding to the slow cooker. Cook until the beef is no longer pink and a bit of fond forms at the bottom, about 6–8 minutes (visual: browned crumbles).
Build the soup
  1. Add the chopped cabbage, sliced carrots, sliced celery, diced onion, minced garlic, crushed tomatoes, diced tomatoes, beef broth, Worcestershire sauce, smoked paprika, red pepper flakes, garlic powder, and cumin to the slow cooker, then stir to combine. Mix until the cabbage is evenly distributed and the spices are streaked through the tomato broth (visual: consistent red-orange color).
Slow cook
  1. Cook on Low for 7–8 hours until the cabbage and vegetables are very tender. The soup should look thick and soft around the edges of the vegetables (visual: fork-tender cabbage).
Season and serve
  1. Season with salt and black pepper to taste, stirring once to fully dissolve. The broth should taste balanced and feel thick (visual cue: it coats a spoon).
  2. Serve with green onions and hot sauce. Add toppings right before eating for the freshest finish (visual: bright green onion flecks and a red-hot sauce drizzle).

Notes

Pro tip: for a thicker texture, let the soup sit covered for 10 minutes after cooking so the cabbage releases moisture and the broth tightens. Refrigerate leftovers in an airtight container up to 4 days; freeze up to 3 months (reheat until steaming). For a lighter swap, use lean ground beef (90%+) to reduce fat while keeping the same spice profile.
