Spicy jalapeño chicken
  • 4 boneless skinless chicken thighs
  • 3 jalapeños 2 minced, 1 sliced for garnish
  • 4 garlic minced
  • 0.25 cup hot sauce
  • 3 tbsp honey
  • 2 tbsp soy sauce
  • 2 tbsp lime juice
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 0.5 tsp smoked paprika
  • 0.25 tsp salt to taste
  • 0.25 fresh cilantro for serving
  • 1 lime wedges for serving

Method
 

Season and sear chicken
  1. Season the chicken thighs with cumin, smoked paprika, and salt. Keep a light even coat so the spices brown during searing.
  2. Heat the olive oil in a large skillet over medium-high heat, then sear the chicken for 5-6 minutes per side until golden. Transfer to a plate once the surface is deeply browned.
Make jalapeño-garlic sauce and glaze
  1. Sauté the minced jalapeños and garlic in the same pan for 2 minutes. Stir frequently until fragrant and slightly softened.
  2. Stir in the hot sauce, honey, soy sauce, and lime juice, then simmer for 2 minutes until slightly thickened. Scrape up any browned bits to deepen the flavor.
  3. Return the chicken to the pan and spoon the sauce over, then cook for 3 more minutes until glazed and cooked through. Flip once and keep spooning so the thighs stay coated.
Garnish and serve
  1. Garnish with sliced jalapeños, fresh cilantro, and lime wedges. Serve right away so the peppers stay bright and the glaze clings to the chicken.

Notes

For extra heat control, remove seeds from the jalapeños you slice for garnish (or use fewer minced jalapeños). Refrigerate leftovers in an airtight container for up to 3 days; reheat in a skillet over medium-low until warmed through. Freezing is not recommended because the jalapeño sauce texture can break after thawing. For a lighter option, swap honey for an equal amount of brown sugar substitute or skip the honey and increase lime juice slightly for tang without as much sweetness.
