Ingredients

Baguette slices
  • 1 baguette Sliced 1/2 inch thick on the bias.
Crostini topping base
  • 3 tbsp olive oil For brushing the baguette slices before baking.
  • 8 oz feta Crumbled.
  • 4 oz cream cheese Softened.
  • 2 tbsp Greek yogurt
  • 1 tsp lemon zest
Hot honey finishing
  • 1 1/4 cup hot honey
  • 0.25 red pepper flakes For garnish.
  • 0.5 fresh thyme For garnish.

Equipment

  • 1 sheet pan
  • 1 food processor

Method

Toast the crostini
  1. Preheat the oven to 400F, then brush the baguette slices with olive oil and arrange them on a baking sheet in a single layer.
  2. Bake for 6-8 minutes, until the crostini are golden and crisp at the edges.
Whip the feta
  1. In a food processor, blend the crumbled feta, softened cream cheese, Greek yogurt, and lemon zest until fluffy and smooth.
Assemble and finish
  1. Spread a thick layer of whipped feta on each crostini so the topping holds its shape.
  2. Drizzle with hot honey, then top with red pepper flakes and fresh thyme for garnish.

Notes

For the smoothest whipped feta, make sure the cream cheese is fully softened before blending and scrape down the sides of the food processor halfway through. Store assembled crostini in the fridge up to 1 day, but toast/crispness is best when served the same day; keep whipped feta refrigerated up to 3 days in a sealed container. Freezing is not recommended for the whipped topping. For a lighter option, swap Greek yogurt for 0% yogurt and use reduced-fat cream cheese to cut calories while keeping a creamy texture.
