Ingredients
  

apple filling
  • 5 apples large, peeled and sliced
  • 0.5 cup granulated sugar
  • 2 tsp cinnamon
  • 0.25 tsp nutmeg
  • 2 tbsp cornstarch
  • 1 tbsp lemon juice
topping
  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 0.75 cup brown sugar packed
  • 1 tsp cinnamon
  • 0.25 tsp salt
  • 0.5 cup unsalted butter cold and cubed
  • 0.5 cup vanilla ice cream for serving (or whipped cream)

Method
 

Preheat and prepare
  1. Preheat oven to 375F. Grease a 9x13 baking dish.
Make apple filling
  1. Toss sliced apples with granulated sugar, cinnamon, nutmeg, cornstarch, and lemon juice. Spread the coated apples in the prepared dish.
Make topping and assemble
  1. Combine all-purpose flour, rolled oats, brown sugar, cinnamon, and salt. Cut in cold unsalted butter until the mixture turns crumbly.
  2. Scatter the topping evenly over the apple filling. Make sure the fruit is mostly covered.
Bake and rest
  1. Bake for 35-40 minutes at 375F, until the top is golden and the filling is bubbling. You should see caramel-colored juices bubbling at the edges.
  2. Rest for 15 minutes to set the filling slightly. Serve warm with vanilla ice cream or whipped cream.

Notes

For the best texture, keep the butter cold and stop mixing as soon as the topping looks like coarse crumbs. Store covered in the refrigerator for up to 4 days; reheat individual portions in the microwave. Freezing works for baked portions up to 2 months—thaw overnight in the fridge and rewarm. For a lighter option, use reduced-fat butter (or a plant-based butter block) in the topping while keeping it cold.
