Ingredients
  

Chicken thighs
  • 5 bone-in skin-on chicken thighs Use 4–6 thighs; bone-in and skin-on helps the glaze adhere and caramelize.
BBQ sauce and seasoning
  • 1.5 cup BBQ sauce Choose your favorite BBQ sauce for a sweet-tangy or smoky flavor.
  • 2 tbsp olive oil Helps seasonings stick and promotes browning.
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 0.5 tsp onion powder
  • 1 salt and pepper to taste Season to your preference; include in the rub.
  • 1 fresh parsley for garnish Optional, for color and freshness before serving.

Method
 

Preheat and set up the pan
  1. Preheat the oven to 400F and place a wire rack inside a foil-lined baking sheet.
  2. Rub chicken with olive oil, garlic powder, smoked paprika, onion powder, salt, and pepper until evenly coated.
Bake and caramelize
  1. Place chicken skin-side up on the rack and bake for 25 minutes, until the chicken is browned and the fat is starting to render.
  2. Brush generously with BBQ sauce, then bake for 10 minutes to begin forming a sticky glaze.
  3. Brush with more BBQ sauce and bake for 5 more minutes until deeply caramelized and tacky.
  4. Broil for 3-4 minutes for maximum caramelization, watching closely so the sauce turns lacquered and mahogany without burning.
Rest and serve
  1. Rest the chicken for 5 minutes to let the juices set, then serve with extra BBQ sauce and garnish with fresh parsley.

Notes

For the stickiest glaze, don’t skip the rack—airflow helps the skin stay crisp while the sauce reduces. Refrigerate leftovers in an airtight container for up to 3-4 days; rewarm in a 375F oven until hot and glossy. Freezing is not recommended due to texture changes in the caramelized sauce. If you want a lower-sugar option, choose a BBQ sauce labeled reduced sugar and keep the rest of the seasoning the same.
