Ingredients
  

Chicken thigh marinade
  • 1 boneless skinless chicken thighs
  • 0.25 cup olive oil
  • 3 tbsp lemon juice
  • 1 tbsp lemon zest
  • 4 garlic cloves, minced
  • 1 tbsp Dijon mustard
  • 1 tbsp honey
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp red pepper flakes
  • 1 fresh herbs for serving

Method
 

Make the marinade
  1. Whisk olive oil, lemon juice, lemon zest, minced garlic, Dijon mustard, honey, oregano, thyme, smoked paprika, salt, black pepper, and red pepper flakes until emulsified and smooth.
  2. Add boneless skinless chicken thighs to the marinade and toss until every piece is fully coated.
Marinate
  1. Refrigerate the chicken at least 2 hours, up to 24 hours, so the flavors soak in and the surface looks well-coated.
Cook and rest
  1. Grill the thighs over medium-high heat for 5-6 minutes per side, or pan-sear in a hot oiled skillet for 5-6 minutes per side, until caramelized char marks appear.
  2. Continue cooking until the internal temperature reaches 165°F, with a golden-browned, caramelized exterior.
  3. Rest the chicken for 5 minutes before serving so juices redistribute and the exterior stays lightly crisp.
  4. Serve with fresh herbs so you get visible green specks over the caramelized surface.

Notes

For easier cleanup and even coating, use a shallow pan or resealable bag for the marinade. Refrigerate marinated chicken 2–24 hours; cook within 1 day once marinated (safest to discard leftover marinade). Freeze cooked thighs for up to 2 months; reheat gently to avoid drying out. If you want a lighter option, use 1 tbsp olive oil plus 1 tbsp extra lemon juice and skip honey (keep the salt and acids) to reduce added sugar while retaining flavor.
