Ingredients

Pan drippings or butter
  • 0.25 cup turkey pan drippings (fat) If using butter instead, use the same amount.
Roux
  • 0.25 cup all-purpose flour
Stock
  • 4 cup turkey or chicken stock Keep warm; include deglazed pan juices in the liquid.
Seasonings
  • 1 tsp fresh thyme leaves
  • 1 tsp soy sauce
  • 1 salt To taste.
  • 1 pepper To taste.

Equipment

  • 1 cast iron skillet
  • 1 sheet pan

Method

Separate and start the gravy
  1. Pour the roasting pan drippings into a measuring cup and let the fat rise to the top; use the layer of fat for the gravy (visual cue: a clear separation between fat and juices).
  2. Spoon 1/4 cup of the fat into a saucepan over medium heat and whisk in the all-purpose flour until a thick paste forms (visual cue: flour is fully incorporated with no dry spots).
Cook the roux
  1. Cook the roux for 3-4 minutes, whisking continuously, until golden brown (visual cue: it turns warm amber and smells nutty).
Simmer and thicken
  1. Gradually whisk in the warm turkey or chicken stock and the defatted pan juices until smooth, scraping the bottom as needed (visual cue: no lumps remain).
  2. Add the fresh thyme leaves and soy sauce, then simmer for 8-10 minutes, whisking occasionally, until thick enough to coat a spoon (visual cue: a line drawn on a spoon stays for a moment).
Finish and serve
  1. Season with salt and pepper to taste, then strain if desired and serve hot (visual cue: gravy flows smoothly and clings to the utensil).

Notes

For the smoothest gravy, add the stock slowly while whisking so the roux fully dissolves before it simmers. Store in the refrigerator up to 3 days; rewarm gently on the stove, whisking to restore silkiness. Freezing: yes, up to 2 months—thaw overnight in the fridge and rewarm while whisking. Dietary swap: for gluten-free, use a 1:1 gluten-free all-purpose flour blend to make the roux.
